SCLEROTIUM GUM is composed of glucose molecules, containing β-1,3-glucose and β-1,6-glucose, with a β-1,6-glucose side chain connected to every three β-1,3-glucose molecules. The presence of glucose side chains enhances the hydrophilicity of SCLEROTIUM GUM.

• Under very strong alkaline conditions, SCLEROTIUM GUM undergoes conformational changes, resulting in a decrease in viscosity.
